8 oz sliced mushrooms
3 cloves of garlic, minced
2 tbsp olive oil
1/4 tsp dried thyme
1/4 tsp dried oregano
Salt and black pepper, to taste
Fresh parsley, chopped, for garnish

Instructions:

To begin, heat the olive oil in a large skillet over medium-high heat
Add the cauliflower florets to the skillet and season with thyme, oregano, salt, and black pepper. Cook the cauliflower florets in the skillet for about 5-6 minutes or until they are tender-crisp
Add the sliced mushrooms and minced garlic to the skillet and cook for an additional 3-4 minutes, or until the mushrooms are tender.
Remove the skillet from heat and garnish with fresh parsley before serving.

Ingredients:

4 boneless, skinless chicken breasts
1 cup Italian-seasoned breadcrumbs
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder

2 large eggs, beaten
1 cup marinara sauce
1 cup shredded mozzarella cheese
1 tablespoon olive oil

Instructions:

Preheat the oven to 375°F (190°C).

In a shallow bowl, the breadcrumbs, Parmesan cheese, garlic powder, salt, and black pepper can be mixed together.

Dip the chicken breasts in the beaten eggs, then coat them in the breadcrumb mixture.
