Warm Up with These Delicious Hot Cocoa Cookies: A Perfect Winter Treat for the Whole Family

Ingredients:


1/2 cup unsalted butter, softened
12 oz. semi-sweet chocolate, melted and cooled
1 1/2 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 1/4 cups brown sugar
3 eggs
1 1/2 teaspoons vanilla extract
25 large marshmallows, cut in half

Directions:


Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
To start making hot cocoa cookies, take a large bowl and cream together the butter and brown sugar until the mixture becomes light and fluffy.
Beat in the eggs, one at a time, then stir in the melted chocolate and vanilla extract.
In another mixing bowl, combine the flour, unsweetened cocoa powder, baking powder, and salt, whisking them together until evenly combined. Then, slowly incorporate the dry ingredients into the butter and brown sugar mixture, mixing them together until the dough is well combined.
Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheets, spacing them about 2 inches apart.
Place the cookies on a baking sheet lined with parchment paper and bake in a preheated oven at 350°F (175°C) for 12-15 minutes, or until the edges are set and the centers are still slightly soft.
As soon as the cookies are out of the oven, gently press a marshmallow half, cut side down, onto the top of each cookie.
After removing the cookies from the oven, place the marshmallows on top of each cookie and return them to the oven. Bake for an additional 2-3 minutes until the marshmallows are soft and slightly toasted. After After removing them from the oven, it's important to let the cookies cool on the baking sheets for 5 minutes to set before transferring them to a wire rack to cool completely
